"Back to Basics" says that when you get meat home from the grocery store, you should unwrap it, salt it , and then wrap it and put it in the fridge.

Has anyone ever done this?

I have never done this, and I've never seen it in any cookbooks I own or on any other food show. I don't think it would do any harm to the meat because salted meat in the refrigerator is one way to cure it. Of course, I don't eat a lot of red meat, so I my just be talking of out my ass. :)

If you're going to use it within a day or two (three tops), I'd say it's a really good idea. I've done it a few times--mainly for parties, I don't eat a lot of meat because I live alone--and it's always made the meat a lot more flavorful.
